We are using WSSF December 2006 (VS2005) and we plan to upgrade to Modeling Edition CTP (VS2008). What about our existing applications? Is there a way to create the models (Service Contract, Data Contract and Host) from our existing projects code (Reverse Engineering)? Is the only solution is to recreate the projects, define the models, generate the code and to move the business logic code piece by piece?

The upcoming version for VS2008 will be similar in that area where you may need to create the models from scratch. However, you can update your existing solution to the new Modeling Edition with very simple steps describied in this thread:

I'm thinking about migrating from WSSF 2006 (VS 2005) to ME (VS2008) too, but I don't know what I gain with that. When I create a new WCF service I will go for ME but I'm not sure which advantages I get if I go from WSSF 2006 to WSSF ME. Could anyone give some guidance or advices here?

Basically you get full compat with VS2008 (all templates will generate projects targeted to fwk 3.5) along with bug fixes and some other new recipe like the Order members for WCF in DC model. Also full GAX 1.4 compatibility and beyond.
